Welcome to the Freedom Food Journal. My name is Jo and I have suffered with digestion related problems since I was about seventeen years old. I began my journey just cutting out wheat and gluten products, feeling a million times better for it, but with time my health deteriorated more and more. I now try to live with out gluten and wheat products, dairy, eggs (as whole eggs but I sometimes use them in baking), high FODMAP foods like beans, cabbage, broccoli & apples. The list seems to become bigger and bigger all the time, but that is no reason to live off a diet of boring foods that bring me no happiness or excitement. I have always had a big interest in food and cooking, so it felt only natural to start a blog where I can share my experiments with “freefrom” foods as well as healthy living.

My recipes will vary in what they do and do not contain. I like to cook vegan but not everything will be vegan friendly. I’m not going to lie; I eat meat and fish. I choose vegan recipes a lot due to the fact that they are generally nutrient rich and easier to digest (minus the beans and what not). And helping the environment and reducing the need for the slaughter and abuse of animals is a major bonus.

I hope I can inspire people that have to cut out a lot of foods like me. It really doesn’t have to be the end of the world at all. Check out my ever growing recipe page for ideas. Also, please note that I live in England and ingredients I use (like my favourite Dove Farm Gluten Free Flour Blends) are what I find most readily available in England, plus I will usually use measurements like ounces, grams, fluid ounces and mils. I some times use cup measures as I have a set of measuring cups and it makes some recipes much easier. Measuring cups are pretty easy to find in the UK (try ebay if you are stuck) so it is worth investing in a set.

    Sounds great. Luckily I don’t have to restrict my diet (although I am a vegetarian), but I think it’s important to not rely on particular types of foods and I’m always looking for new recipes to try! (Especially to convince my friends that a veggie diet is much more exciting than they think!)
