Baked Corn Tortilla Chips


I love tortilla wraps but it’s hard to find good gluten free ones. In the UK you can buy online from Mexgrocer but they still aren’t as good as the gluten ones. I have two favourite ways of preparing these. One is a melty cheese (lactose free or vegan) quesadilla, and the other is cut into shapes and baked to make crunchy tortilla chips. And what is a chip without a dip? I kept mine super simple…

2-3 corn tortillas
1 tbsp olive oil
1 tsp smoked paprika

8-10 cherry tomatoes
Small bunch chives
Squidge of lime juice

Mix paprika with oil and paint into all sides or tortillas. Cut up into triangles or prefered shapes and bake in a medium oven for 5-10 mins.

Meanwhile, finely dice tomatoes and mix in lime juice and chopped chives. Dip chips into dip. Easy as that!
